Mediterranean Harvest: Vegetarian Recipes from the World's Healthiest Cuisine
Intensely flavorful and inherently healthy, Mediterranean food is one of the world’s most appealing cuisines. Mediterranean cooks know how to make eating a pleasure. They do it simply—with olive oil and garlic; with herbs and spices; with tomatoes and eggplants, peppers and squash, figs and peaches, and other seasonal produce. And of course there is crusty bread and local...more

There was a lot that was drool-worthy in here, but I ended up feeling like most of the recipes were too simple (pasta with cheese, that sort of thing) or way too complex (requiring a cheese, a nut, and a bean that I don't think they carry at my local supermarket). I did have a great time mucking about in the bread chapter (the Pugliese Bread alone might be worth the price of admission). And I made a roasted eggplant with tomato sauce and cheese that I'll make again. I did start to feel, though,...more
Fantastic! My one real disappointment--a vegetarian cookbook really must contain more bean recipes, as they are the nutritional backbone of a healthy vegetarian diet. There are 13 basic bean recipes, and more scattered here and there. Better than most cookbooks, but still not enough! Also, I was thrilled that there was actually some whole wheat (or more often, half-whole wheat) traditional bread recipes in here. Again, not as many as I would like, but it's far more than I've found elsewhere. Tha...more
Recipes that I've made and loved so far:
Socca (chickpea flour pancake) - our favorite way to make socca. The kids eat this as snacks and are always asking for more! The fresh thyme makes this so delicious.
Eggplant Parmesan (my go-to recipe now as it roasts the eggplant first instead of having it dripping in oil; breadcrumbs are sprinkled on top instead of coating the entire eggplant... Much healthier and all the flavors are still there without weighing you down)
Spanikopita (my go-to recipe for...more

I enjoyed reading this cookbook. I've only tried 4-5 of the recipes, but they turned out great. I liked that it covered the entire Mediterranean region. Some of the recipes are really, really simple, while I noticed that a few had some obscure ingredients. For the most part though, it seemed like a regular grocery store should have what you need to cook out of this book. Plus, Mediterranean food is delicious and healthy!
A thorough cookbook that features vegetarian recipes not only from traditional Mediterranean countries such as Italy and Spain, but also Provence and Northern Africa. I liked that it included bread, egg and cheese dishes and desserts as well. Most of the recipes were pretty simplistic, although some involved ingredients that could be hard to find outside of a major metropolitan area or with extensive internet searching.
This was a fun cookbook to read. I learned a lot. However, I haven't enjoyed a lot of the recipes inside. I have just used her overall ideas and come up with some DELICIOUS recipes. It has been a good reference, but I have learned that I don't necessarily like all of the ingredients that she uses, or recipes can be made easier.
