One of those few "must own" cookbooks...if you're at all interested in smoking meat. The format is beautiful and easy to follow, with simple recipes and instructions. The beginning portion is comprehensive, detailing various types of smokers, wood, utensils, and even how to start fires (coal, wood). Handy reference tables of cooking times for various temperatures and meat sizes, and overall just a real helpful, informative tone to the book. Good read on smoking. I have not gotten to the trying an of the recipes in it but they look great. If you like smoking meat I highly recommend this book plus got to his website and join the smoking meat forums. There are tons of great people there to help you.
