Having never made soup in my life, I made it my New Years resolution to learn. My family are delighting in this new found hoody, and so far we have enjoyed five of the recipes, I plan to make many more. I don't bother making the stock from scratch and just use oxo. The cooking times seem a little out, they definitely don't include preparation, but I have found its a pleasurable way to pass a few hours, in the kitchen, with nothing else to focus on... At the time I bought this book and book 2 I was going through a phase of making soup for my office colleagues to share for lunch. The soups made from this book were very popular, so much so that other departments wanted soup and so I began charging a small amount to cover the costs. Alas, as the quantities required grew larger I had to discontinue my "soup works" due to lack of time in the evening to prepare it for the next day, so my soup empire came to an end.

Lentil and Lemon, Carrot and corriander, Roast Parsnip and Parmesan. When ever I want some comfort food this is the book I turn to. I love this book. The soups are full of flavour and filling and substantial. Excellent to take to BBQ's on colder evenings. I have had this book for years and am still trying new recipes. I especially like the note section at the back as one day I hope to have had a go at all of the recipes. Spinach and Nutmeg, White Bean and tomatoe....

The soups are delish but some are a bit tricky to make and the ingredients hard to find living in Thailand!
