North Americans are (slowly) discovering that Spanish food is not the same thing as Mexican food. It is true that the cooking of Spain shows its influence in some Mexican cooking and also true that some ingredients from the New World (e.g. tomatoes) show their influence in modern Spanish cuisine. It is equally true that there are Moorish, Filipino and Portuguese influences, although saying the latter out loud may be considered fighting words in some parts.
