I have this book, and it is fantastic! I'm not such a vegetarian myself, but this is a great introduction to a few key principles of that life. I just don't like to be hungry all the time, and her food is quite yummy, and very filling. She does happen to be a friend of mine, and I got to taste some of the desserts she was putting into the dessert cookbook, and I can't wait til that one comes out! She is a wonderful person too. :)
I won this book on Goodreads and I am so glad I did. I have a 9 yr. old non-meat eater and these recipes all seem very appetizing for her. Unlike some vegetarian cookbooks where there are a lot of ingredients that you have to go out and hunt for in a store you've never been. Tonight we are going to make Chickpea, Broccoli and Quinoa Casserole. For dessert we will have Carrot Nut Raisin Bread. Yum !
Snowy day so I thought I'd try recipes from this cookbook I just won from goodreads. Oatmeal Pancakes for breakfast (with added blueberries), Lentil Soup for lunch, and Baked Macaroni and Cheese for dinner. All simple and delicious, made with ingredients I had on hand. This would be a great cookbook for someone learning to cook because of the encouraging results. Thanks!
