Miso, dashi, toss in a few fresh ingredients. Simmer the lot for a healthy wholesome meal. The pot-au-feu with miso recipe/photo looks exactly like the lunch I had in a Hokkaido cafe housed in a quaint little white and red cottage. Especially like the page on how to recycle used dashi ingredients into savoury rice toppings.
