I'm always on the lookout for new and interesting recipes that use greens. Thanks to the huge health-boost they offer any diet, including them consistently is important. And sometimes, they can get a little boring. The most nutritious greens tend to be a little bitter with limited cooking options. So this cookbook really caught my interest.

I borrowed this book from the public library, and if my condo weren't such a tiny space, I would have it in my own kitchen library. The recipes epitomize simplicity and vibrancy, and I love that they showcase the vegetable. Also the photographs are gorgeous. sexy food pictures! i liked that the nutritional info for each vegetable was listed. i wish they had listed more recipes for things like okra and beets. but the section on swiss chard was very ample, which i appreciate since there is never a shortage of that in the garden, and i'm always looking for ways to change it up and keep it interesting.
