When I'm writing a sijo poem of my own, I actually copy a classic Korean sijo (in English translation) onto the page and use it as a model.

If I am writing prose, which is more difficult for me, I start off by both reading a poem and then writing one. That not only gets the creativity started, it can give me great ideas for the prose. I just started a short story based on a Collom lune poem I wrote.(less)
