From an award-winning food writer and chef-the breakthrough cookbook that identifies 12 micronutrient-rich foods that can help protect you against major disease and shows you how to turn them into mouthwatering dishes.A diet rich in nutrients, including protein, carbohydrates, fat, fiber, and vitamins, is not enough for our health. For optimum protection against heart disease, cancer, diabetes, and other chronic diseases, we also need an abundance of micronutrients. How to make sure we get enough of these vital micronutrients-and how to prepare them easily and deliciously-is what Dana Jacobi shows us in 12 Best Foods Cookbook. After identifying the 12 foods containing the most potent micronutrients-broccoli, black beans, tomatoes, salmon, soy, sweet potatoes, oats, onions, blueberries, walnuts, spinach, and chocolate-Jacobi provides over 200 fabulous, remarkably varied recipes starring these ingredients. From appetizers and sandwiches to sides and smoothies, from Salmon and Creamed Corn Chowder to a stir-fry of Asparagus, Red Pepper and Curried Tofu, the recipes in this book prove that a diet rich in all the micronutrients science has shown to be indispensable to our well-being can be a parade of delectable dishes. And, since chocolate is the most powerful antioxidant food, The Ultimate Bittersweet Brownies is one of the sweet treats that will satisfy the yearnings of health-conscious eaters and passionate chocoholics alike.

<div><div>Which foods offer the most nutritional value? Which supposed smart choices actually fall short of their promised good? Expanding the scope of her popular 12 Best Foods Cookbook, Dana Jacobi explores the micronutrient benefits in over 60 common foods and provides a wealth of recipes that prove, as Gourmet Retailer has previously written: "we are in the hands of a wonderfully creative and talented cook."

Did you know that green beans are a nutritional lightweight compared to the green soybeans called edamame? Or that zucchini is a weakling when rated against winter squashes packed with carotene, fiber, and more? For each "good food" she lists, Jacobi explains the science behind her selection—and shows how to exploit each ingredient’s inherent "goodness" with her original, innovative spins on classic dishes like Turkey and Spinach Mini-Meatloaf or new combinations like Red Lentil and Apricot Soup . Always mindful of the home cook’s need to get meals on the table quickly, Jacobi includes many dishes that take 30 minutes or less.

As cookbook author Jack Bishop has written of her 12 Best Foods Cookbook: "Dana Jacobi proves that good nutrition and pleasure are not mutually exclusive. Her inventive, simple recipes satisfy our desires and keep our bodies healthy."

</div></div>

Since Roman times, cultures around the world have been enchanted with cooking in clay and the juicy, full flavors it preserves in any dish. Today's healthminded cooks will find an added bonus: Clay pot cooking is practically foolproof and often fat-free. In The Best of Clay Pot Cooking, Dana Jacobi takes a fresh look at cooking in clay pots and comes up with over 40 easy and delectable recipes, from soups and stews to breads and desserts. Some reflect traditional uses for the clay pot, such as roasting poultry and beef; others are inventive new dishes drawing on ethnic influences -- Chicken Tagine with Green Olives & Preserved Lemon, for example, or Salmon with Ginger & Lime, Shrimp & Ham Jambalaya, Black & White Chipotle Chili, Moroccan Semolina Bread, or Banana Bread Pudding. And all these are prepared with minimum fuss, maximum flavor, and enormous nutritional value.

You might think sinfully rich (or fat-laden) when you hear recipes with names like The Creamiest Cheesecake in the World, Wild Mushroom Ragout, Aioli, Broccoli Bisque, Stuffed French Toast, and Blueberry Buttermilk Scones, but all of these (and many more) have been created with soyfoods which are naturally low in fat. Author Dana Jacobi has masterfully married natural ingredients and soy foods to create lusty, rich dishes in The Natural Kitchen: Soy.
Most of the 75 recipes include ideas for variations, which actually doubles the number of options as well as inspiring a bit of creativity in the kitchen. For example, Jacobi suggests using the filling for Sicilian Stuffed Squash to stuff grape leaves, or give tomato-braised tofu a Tex-Mex kick by adding serrano chili and diced tomato. The Natural Kitchen: Soy serves as an all-around soy cookbook, with variety of preparation times and styles. The Chocolate Silk Pie calls for only three ingredients (plus the piecrust) but the tofu "scallops" Ritz Carlton required a number of steps and would be better suited for a special occasion.
Adding soy to the diet has been proven to lower heart cholesterol and to help prevent heart disease. With The Natural Kitchen: Soy, you will be creating meat- and mostly dairy-free dishes that break new ground in the definition of good food using soy products such as tofu, tempeh, soymilk, soybeans, miso, and TVP flakes. In additional to the recipes, Jacobi has included an informative section, "All About Soy Foods," as well as listing mail order sources. --Gretel Hakanson
