For an ever-growing army of admirers, Hugh Fearnley-Whittingstall can do no wrong. The River Cottage Year seems sure to follow the commercial and critical success of his previous book, The River Cottage Cookbook, which was something of a publishing phenomenon, selling by the bucket-load and winning every major cookery book award.
The format of this new book is intriguingly different: this time we are given (in chronological order) the author's insights and observations on life and food as the seasons and months go past, interweaving cookery with the cycles of the natural year. These sections aren't all the book has to offer: the new volume is crammed with 100 original seasonal recipes, all beautifully detailed. Of course, we may look at the results of these mouthwatering delights in the new Channel 4 series that accompanies this book and lament how we're not quite in the same cookery league. But Fearnley-Whittingstall has a gift not possessed by some of his rivals: we are always made to feel that the delights offered here are within our grasp, provided we follow the helpful advice we are given.
The food is a mixture of the ambitious and the achievable, and looking through The River Cottage Year is a blissful experience, whether your intention is simply to dream about dishes or to actually get down to the nitty-gritty of making them. The illustrations are as tempting as anything in the text, and the book will unquestionably raise the author's profile still higher.
--Barry Forshaw

For almost two decades, 'Hugh Fearlessly-Eatsitall' has been writing about food in all its guises. To some, his concept of 'good eating' might seem a bit skewed - he'd always bypass a McBurger in favour of a squirrel sandwich, and make a detour for fresh road kill - but to others he is a shining and shaggy beacon of good sense in a food world gone mad. Armed with a broad mind, a quick wit and a ready appetite, Hugh covers almost every area of global food culture. Whether singing the praises of offal; debunking Colonel Sanders and Dr. Atkins; playing 'poisson roulette' with the deadly fugu fish in Tokyo; pondering the moral inconsistency of those who condemn fox hunting for its cruelty while happily tucking into factory-farmed chicken; fishing for marlin in Kenya, trout in Chile and barracuda in the Bahamas; analysing the tea-dunking qualities of some classic British biscuits; contemplating why if piglets are destined for the pot, why aren't puppies; or reminding us that a reindeer isn't just for Christmas, but tasty all year round, Hugh has an unerring ability to entertain and provoke.

20% OFF! Whilst Stocks Last! More than just a cookbook, this beautifully produced volume in three parts promotes a total understanding of British fish, from their natural habitats to what sauce they go best with to how to respect their seasonality, in keeping with the River Cottage ethos. The first part is dedicated to understanding fish - Hugh and Nick explain the ins and outs of procuring a good fish, discussing fish farming, aquaculture, sustainability and harvesting issues, how to buy and catch fish in an ethical way, and how to prepare it for the kitchen. Next they open up a whole world of fish cooking - pickling, salting, barbecuing, frying, potting, stewing, smoking and more are explained in depth, each technique followed by classic recipes from gravadlax to kedgeree, from sashimi to chip shop battered cod. Finally, Hugh and Nick present Britain's best fish by species, giving portraits with notes on seasonality and ecology, as well as listing the relevant recipes from part 2 with alternatives. "The River Cottage Fish Book" is the only book on fish that the adventurous fish lover will ever need. The ultimate guide to British fish that reveals everything from their natural habitats to cooking and preserving techniques to how to respect their seasonality.

<DIV>Preserving is a centuries-old way to make the most out of every season, stretching the more bountiful months into the sparser ones—and what’s more, it is fun, rewarding, and easy to learn. Explaining the history, science, and basic processes of preserving, Pam Corbin guides us through a world of jams, jellies, butters, curds, pickles, chutneys, cordials, liqueurs, vinegars, and sauces that can be made from local produce throughout the year. She includes 75 recipes, covering everything from traditional favorites such as raspberry jam, lemon curd, quince cheese, and sloe gin, to fresh new combinations such as apple butter, cucumber pickle, and nettle pesto. The handbook includes seasonable tables, regional maps, flow charts of all the preserving processes, and full-color photographs throughout, and is completed by a directory of equipment and useful addresses.</DIV>

<div><div>Few foods rival the feel-good factor of soup, whether a hearty minestrone on a chilly evening, a cooling gazpacho in the heat of summer, or the comforting tomato soup of childhood memory. This rich collection brings together 100 soup recipes from some of Britain's leading chefs and food writers. From Jamie Oliver's Chickpea, Leak and Parmesan Soup, to Rick Stein's Classic Fish Soup with Rouille and Croutons, here are recipes for every mood and meal. And as every culture embraces soup of some kind, the influences at work here are wonderfully varied—Ken Hom's Tomato Ginger Soup, Terence Conran's Borscht, Nobu's Seafood Miso with Chorizo, and Sam and Sam Clark's Chestnut and Chorizo Soup, to name but a few. Soup is surely the ultimate seasonal food, and, reflecting this, the book is organized by time of year, so that ingredients are easy to find and at their full-flavored best. </div></div>

The theme for the River Cottage Diary 2008 is regional and local food. We celebrate the food and food heroes of 12 different regions of the UK, with information about what is especially good from each area, lists of seasonal fruit, vegetables and meat, and 36 classic local recipes on perforated card that you can use again and again. This year, Hugh and the River Cottage team are tackling the big national supermarkets as they attempt to set up their own shop in the town of Axminster in Devon, teaming up with local farmers and food specialists. The River Cottage Diary 2008 will have a dedicated section about the project, complete with profiles of eight of Axminster's top local producers. As always in this week-to-view diary, included are useful foodie dates (including many of the major food festivals and agricultural shows), websites, planting tables, seasonality charts, weights and measures and even moon phases. The River Cottage Diary 2008 is A5, spiral bound and printed full-colour on 100% recycled paper.

Putting food on the table for the family quickly and economically doesn't mean you have to compromise on quality. This book shows how Hugh's approach to food can be adapted to suit any growing, working family, or busy young singles and couples for that matter. Breakfast, baking, lunchboxes, quick suppers, healthy snacks, eating on the move and weekend cooking for the week ahead - all these, and more, will be covered in River Cottage Every Day. As Hugh says: "I have honed the River Cottage approach to food over a decade now, and I believe passionately that it is relevant to everybody, every day. You only have to decide that food, and its provenance, matters to you and your family, and the River Cottage way of doing things can offer a whole raft of solutions: food sourcing and shopping strategies, thrifty kitchen tricks and, above all, approachable, delicious, easy recipes. This book makes no prior assumptions about where you shop, what you may or may not know about growing vegetables or keeping livestock, or whether you can tell the difference between a cep and a chanterelle. But once you own the book, these things may well begin to matter to you. All you will need to reap the benefit is a commitment to spend at least some time in the kitchen, with fresh ingredients, a few times a week. And if you don't have that at the outset, I believe that a little time spent with this book - perhaps in bed, before you go to sleep - will soon put that right! Above all, I intend to tempt and charm you towards a better life with food - with a set of simply irresistible recipes that just happen to be seasonal and ethical."

Why preserve? Because preserving makes food taste great, is cheaper than shop-bought versions and ultimately because it is addictive - once you begin, you will soon discover a reluctance to return to inferior, mass produced food. This book is a panoramic introduction to a world that will consume and seduce you. Full of practical information, it covers all the main techniques of food preservation with accessible instructions and a light-hearted manner. Johnny and Nick show you how to dry meat and herbs, salt fish and cure ham. They teach you how to build a smokehouse and then smoke your own salmon, how to make sausages, pickle eggs and infuse oils, preserve with sugar, bottle fruit in alcohol and can your own produce. This volume also reflects the international nature of these techniques, exploring the biltong of South Africa, Asian kim chee and the herbes de Provence as well as British classics such as kippers, marmalade and sloe gin. Accompanying the techniques are over 100 recipes that will help you to bring out the best of your preserved food - what to do with your damson jam, home-made chorizo or smoked oysters? There are also entertaining tales about the history of preserving, including the story of the American World War II pilots who made ice cream by tying cartons of the mixture to the tails of their planes. Preserving is like an alchemy. It is about transforming food. Creating individual food that you will enjoy not only because it tastes so good, but because you have crafted it, tailored it to your own palate and then waited for it. But above all, preserving is fun.
